I’ve been working to perfect a brownie recipe that is a little healthier than normal. I’ve looked around on the internet and I’ve seen many different recipes for brownies. Some are made with Avocado, some with Zucchini and I’ve even seen some with Cauliflower. This recipe is made with zucchini as the base along with honey and apple sauce as a sweeter. Believe it or not, it is very easy to make and very good.
- Lets start with the ingredients:
- 2 cups shredded zucchini
- 1 cup almond butter
- 1 ½ cup semi-sweet dark chocolate chips
- 1 whole egg
- 1/3 cup raw honey
- ¼ cup apple sauce
- 3 tsp. vanilla extract
- 3 heaping tbsp. cocoa powder
- 1 tsp. baking powder;
- Chopped/crushed pecans (optional)
- 1/2 tsp. Sea Salt (optional)
Preheat your oven to 35o degrees. Combine all the ingredients at once and add to a food processor or a mixer until smooth. Pour into an 8 x 8 non-stick or lined pan and top with nuts and a sprinkling of sea salt. Bake for about 45 minutes.
Make sure to let them cool before cutting and removing from the pan.
